Just changed the valve cover gaskets, water pump, and radiator on my 06 5.7 Charger, pump went bad after the radiator clogged up, luckily everything seemed well after, except I keep getting this low oil pressure light after driving a short distance, I’ve stopped and turned off my car after reaching somewhere I can, I get no engine knock and the engine sounds fine, but the light keeps coming on, was hoping anyone would have a clue, I get no codes when I scan.

It's odd that no codes are being logged. Problem could be the oil pressure sending unit or the wiring harness/connector. The sending unit is behind the alternator and the wiring harness/connector may have been pulled, etc... while replacing the water pump.
What's the condition of the engine oil? Only way to know for sure what the real oil pressure is is to remove the oil pressure sending unit and connect an external pressure gauge.
